A spiced, hearty lentil soup. Delicious with a dollop of Tzatziki.

Recipe Ingredients for Lentil Soup

1 1/2 cups lentils
4 cups vegetable broth
4 cups water
2 tsp olive oil
3 large carrots, finely chopped
1 medium onion, chopped
3/4 tsp salt
1/2 tsp pepper
4 cloves garlic
2 tsp ground cumin
1 tsp ground coriander
1/4 tsp cardamom
1/2 tsp cayenne
1/2 tsp ginger
2 cups spinach, packed

Recipe Directions for Lentil Soup

  1. Combine lentils, vegetable broth, and water in a large pot; bring to a boil. Cover and turn down heat to medium-low and simmer 30 minutes, until lentils are tender.

  2. While lentils cook, heat olive oil in a large skillet. Add carrots, onion, salt and pepper. Saute 15 minutes, stirring occasionally, until carrots begin to soften and vegetables begin to brown. Add garlic and spices; saute 30 seconds, stirring constantly. Remove from heat.

  3. When lentils are tender, add spinach; cover and allow to wilt for a couple of minutes. Stir in carrot mixture. Serve with a dollop of Tzatziki or yogurt and garnish with cilantro or parsley, if desired.
