Simple lentil soup with chopped vegetables.

Recipe Ingredients for Lentil soup

1/2 cup lentils
14 ounce crushed tomatoes
2 stalks celery, chopped
2 carrots, chopped
1 onion, chopped
6 cups water
3 tablespoons olive oil
6 cups water
1 tablespoon sea salt
1 teaspoon black pepper
4 cups swiss chard, chopped

Recipe Directions for Lentil soup

  1. Cook canned tomatoes in 1 tablespoon olive oil for 15 minutes.

  2. Bring 6 cups of water to a boil

  3. Add lentils, chopped vegetables, seasonings and olive oil, and return to a boil.

  4. Reduce heat and simmer 30-40 minutes.
