An easy, Italian flavored lentil soup that cooks quickly in a slow cooker.

Recipe Ingredients for Lentil Soup

1 cup green lentils
2 cups carrots, chopped
2 cups zucchini, chopped,
1 medium onion, chopped
2 garlic cloves, minced
1 cup enoki mushrooms
1 1/2 cup water
28 oz chicken broth
12 oz diced tomatoes
1/2 tsp dried oregano
1/2 tsp dried basil
1/4 tsp dried thyme

Recipe Directions for Lentil Soup

  1. Rinse and drain lentils and add to slow cooker.

  2. Add vegetables, broth, tomatoes and spices to the cooker and stir.

  3. Cook on high for 3-4 hours or on low for about 6.
