Recipe Ingredients for Lentil Soup

1 cup diced carrot
1 cup diced celery
2 cup diced onion
1 pound lentil
4 cups chicken stock, low sodium
6 cups water
3 tbsp olive oil
1 tbsp fresh thyme
1 tbsp fresh rosemary
1 tbsp minced garlic

Recipe Directions for Lentil Soup

  1. Cook diced vegetable 1-3 in a little of stock

  2. Stir in rinsed lentils, add stock and boiling water and bouquet garni of 2 fresh thyme springs, 6 flat leaf parsley sprigs and 2 bay leaves in cheesecloth

  3. Bring to a boil

  4. Reduce to simmer and cook, partially covered, until lentils soft, about 1 hour.

  5. Remove bouquet garni and puree 2 cups of lentil, then return to the pot

  6. If soup too thick add water

  7. Heat olive oil and herbs and garlic and serve to add a spoonful on top
