Recipe Ingredients for lentil soup

1 large onion, chopped
3 cloves garlic
1 1/2 tablespoons olive oil
1 1/2 cups dried lentils
1/4 cups brown rice, uncooked
1 oz. can diced tomatoes
3 cups stock
1/2 cups frozen corn
2 cups swiss chard
1 tablespoon salt
3/4 teaspoon cumin
2 tablespoons lemon juice

Recipe Directions for lentil soup

  1. cook lentils with rice. drain.

  2. saute onion in oil until soft

  3. add tomatoes, stock, lentils, rice, and grated garlic.

  4. bring to a simmer. add seasonings, lemon juice, corn, and chard at last minute.
