Makes 10 servings



basic soup - add in any veggie in the fridge that you want to use up. Can toast tortillas to add on top and low fat cheese if wanted. Calories for tortillas and cheese not included

Recipe Ingredients for Lentil Soup

1 medium onion
1 medium tomato
3 cups spinach
6 baby carrots
1/2 small zucchini
2 stalks celery
1 can tomato paste
19 oz lentils
1 tbl cumin
1 tbl chili powder
1 tsp pepper
1 clove garlic (or to taste)
1/2 cup cilantro
8 cups water
1 chicken bouillon cube
1 vegetable bouillon cube

Recipe Directions for Lentil Soup

  1. saute onions

  2. add bouillon cubs

  3. add tomatoes paste

  4. rinse lentils

  5. chop and add remaining vegetables, spices and water

  6. cover and simmer. I chose to leave this not too spicy as we had our young grandchildren over - instead I will have cumin and chilli powder on the table for the adults
