Low fat, high in fiber & protein

Recipe Ingredients for Lentil Soup

4 cups chicken broth, low sodium
4 cups water
2 cups dried lentils
3 carrots
3 stalks celery
1 medium onion
4 cups baby spinach
1 tablespoon olive oil
2 tablespoons ground flaxseed

Recipe Directions for Lentil Soup

  1. Heat the olive oil in a large pot.

  2. Dice the onion, carrot and celery and add them to the pot. Season with Salt and pepper.

  3. Saute in the olive oil for 5-10 minutes until soft, but no color.

  4. While these are sauteing, wash the lentils and drain.

  5. Add the Chicken broth to the pot followed by the lentils and season with salt, pepper, rosemary and thyme.

  6. Add baby spinach and the flaxseed and stir well.

  7. Simmer for 2-3 hours on low until the lentils are tender. Add water to thin the soup if it is too thick for your liking.
