Traditional, filling greek soup with lentils and olive oil

Recipe Ingredients for Lentil Soup

1/2 kg lentils
3 medium tomatos
2 onions
2 garlic cloves
1 1/2 tbsp bay leaf
4 tbsp olive oil
3 tbsp vinegar
1 tsp salt
1 tsp pepper

Recipe Directions for Lentil Soup

  1. Thoroughly rinse lentils.

  2. Fill a large saucepan up to 2/3 with water, add lentils and bring to the boil.

  3. Discard used water and add fresh water to the saucepan with the lentils.

  4. Chop up tomatos, onions and garlic and add to the lentils.

  5. Boil soup until lentils are tender. 5 mins before it's ready, add beay leaves, olive oil, vinegar, salt and pepper.

  6. Serve hot, with garlic bread. Add oregano or more vinegar to taste.
