Recipe Ingredients for Lentil Soup

2 cups lentils
6 cups chicken broth, 99% fat free
2 cups water
2 chicken bouillon cubes
1 cup onion, diced
2 cloves garlic, diced
1 tsp cumin
1 tsp turmeric
1/4 cup lemon juice
1 tsp olive oil

Recipe Directions for Lentil Soup

  1. Bring lentils, broth, and water to a boil. Lower heat and simmer for about 20 minutes or until the lentils are soft. Add the bouillon cubes and spices.

  2. Saute the onion and garlic in the olive oil until soft and lightly brown. Add to the soup and let simmer 5 minutes.

  3. Turn off the heat and add the lemon juice. Ladle into bowls and garnish with parsley and a sprinkle of paprika.
