Italian lentil soup, its tasty. Its also cheap, very forgiving, and great on a cold fall evening.

Recipe Ingredients for Lentil Soup

2 links turkey sausage
1 cup dry lentils
2 cup chicken stock
1/2 eggplant
1/2 zucchini
1 small yellow onion
2 tbs. olive oil
2 small carrots
2 stalks celery
1 oz. protein

Recipe Directions for Lentil Soup

  1. brown sausage (low-fat italian turkey sausage works well)

  2. put oil in large pot, let heat up on med. high heat

  3. add onion, salt to taste, let magic work for a few mins.

  4. add carrot- another few mins (soft, but no color)

  5. crush some garlic in there, simmer simmer

  6. add the chicken stock

  7. add lentils

  8. add zucchini

  9. add a bay leaf, marjoram, thyme, pizza seasoning (hey, it works) whatever you like

  10. cover, reduce to low and simmer 20 mins.

  11. add eggplant, check seasoning

  12. cover, simmer for another 15-20

  13. add a handful of fresh parsley, mix in protein powder

  14. EAT!

  15. top off with cooking sherry or Greek yogurt (or any plain yogurt), or eat plain, if you're boring/ haven't been grocery shopping lately.
