Makes 6 servings



Lentil soup with a slice of cornbread. To amp up the veggie meter, add a box of frozen spinach.

Recipe Ingredients for Lentil Soup

7 stalks celery, cut into bite size pieces
1/2 large onion, sliced
7 carrots, cut into bite size pieces
14 oz tomatoes, with jalepanos
42 oz. water (3 cans)
3 packets chicken boullion
16 oz. lentils
8 oz. ham slice

Recipe Directions for Lentil Soup

  1. Add celery, onions, carrots, tomatoes, water, boullion and lentils to a large stock pot.

  2. Bring to a boil and simmer for 20 minutes.

  3. Take off heat and allow to cool.

  4. Separate into 6 equal portions.

  5. Dice ham and divide between the 6 containers.
