A hearty lentil soup that's low in fat and high in fibre

Recipe Ingredients for Lentil Soup

1 3/4 cups yellow split peas
2 cup carrots, chopped
3/4 cup parsnip, chopped
1 cup celery, chopped
1 cup cauliflower, chopped
1/2 cup yam, chopped
3/10 cup red pepper, chopped
12 cups water
1 onion
5 cloves garlic
2 tsp olive oil

Recipe Directions for Lentil Soup

  1. Fry onion in olive oil with some curry spices

  2. Add chopped veges and water

  3. Cook until soft

  4. Blend veges

  5. Add lentils

  6. Cook until soft

  7. Add curry spices, salt and pepper to taste

  8. (You can use chicked stock in place of some of the water if you choose)
