A versatile soup all year round. As a meal. I like it served along with a crust peasant bread and a salad.

Recipe Ingredients for Lentil Soup

1 lb. dried split peas, soaked for about an hour in water
1 small onion, chopped
2 carrots, diced
3 stalks of celery, diced
2 cups of vegetable broth
2 tsp. curry powder
1 tsp. cumin
1/4 tsp. of cinnamon
1/4 tsp. cardamom
1/4 tsp. coriander
2 tsp. kosher salt

Recipe Directions for Lentil Soup

Sauté the onion, carrot and celery for about 5 minutes in 2 Tbsp. olive oil or until soft. Rinse the peas and add them to the sauté along with the container of veggie stock. Add the spices. Simmer the peas covered for about 45 minutes, adding more water as needed. You have the option of pureeing the soup or leaving it with more texture. I like the latter.
