This is a quick and easy soup to make and you can freeze it in. There are about 8 portions.

Recipe Ingredients for Lentil soup

2 vegetable stock cubes
200 g red Lentils
2 onions
4 carrots
2 liters water

Recipe Directions for Lentil soup

  1. pour 2 litres water in a thick bottom pan and add the 2 stock cubes, 200g red lentils bring to the boil and simmer for 30-45 minutes. Add the chopped onions and carrots and bring to the boil and again simmer until the carrots and onions are soft and of course the lentils are soft.

  2. Use a magicmix or foodprocesser to puree the soup. Add extra water if needed, salt and pepper
