My basic lentil soup- makes a great lunch

Recipe Ingredients for Lentil Soup

100 g pancetta
1 large onion
2 large carrots
1 red pepper
1 cup lentils
1 can plum tomatoes

Recipe Directions for Lentil Soup

  1. fry pancetta in a dry pan until fat starts to come out

  2. chop onion and fry in pancetta fat

  3. add the rest of the ingredients plus seasoning to taste.

  4. add 500ml water or stock and simmer for half an hour
