Lentil soup with carrots and celery

Recipe Ingredients for Lentil Soup

1 cup dry lentils, rinsed and drained
1 large onion, chopped
3 cloves garlic, minced
30 ounces tomato sauce
6 cups water (if using chicken base) (4 cups water if using chicken broth)
6 carrots, chopped
3 stalks celery, chopped
2 cups chicken broth or 1 1/2 Tbsp chicken base
1 1/4 cup white beans (15 ounce can, rinsed and drained)
2 tsp salt
1 tsp black pepper
1 tbsp fresh basil
1 tbsp bay leaves, crumbled (or 2 whole leaves)

Recipe Directions for Lentil Soup

  1. Combine and bring to a boil. Leave basil and add before last 5 or 10 min.

  2. Simmer for one hour or until vegetables are tender.

  3. Let sit for 15 min before serving.
