Recipe Ingredients for lentil soup

1 large onion
1/4 cup olive oil
2 carrots, diced
2 stalks celery, chopped
4 cloves garlic
1 tsp dried oregano
1 tsp dried basil
14 oz. tomatoes
2 cups lentils
8 cups water
1/2 cup spinach

Recipe Directions for lentil soup

  1. Saute onions carrots and celery until tender.

  2. Stir in garlic, oregano, basil and bay leaf.

  3. Cook for two minutes.

  4. Stir in lentils.

  5. Add water and tomatoes

  6. Bring to a boil. Reduce heat and simmer until lentils are tender.
