A light but hearty soup that is vegetarian- and vegan-friendly.

Recipe Ingredients for Lentil Soup

1.5 cup Lentils, Mature Seeds
14 oz Tomatoes Diced
2 medium (2-1/2" dia) Onions
1 oz Oregano
1 can (6 oz) Tomato Products
0.67 cup Olive Oil
3 carrot (7-1/2") Carrots
1 tsp Garlic Powder
4 cup (8 fl oz) Water
1 oz Chia Seeds, Dried

Recipe Directions for Lentil Soup

  1. Boil lentils for 4 minutes, drain, and set aside.

  2. Saute onions in olive oil until transparent.

  3. Add lentils, carrots, garlic, oregano, chia seeds tomatoes, and tomato paste.

  4. Add 4 cups of water, bring to boil.

  5. Simmer for 20-30 minutes, or until lentils are tender but have not begun to disintegrate.
