Basic lentil soup with green & yellow peppers simmered with a ham hock

Recipe Ingredients for Lentil Soup w/ Peppers

8 cups water
312 grams, V8 juice, low sodium (Campbell's)
625 grams, lentils, dried
37 grams, sun dried tomato
125 grams, green sweet pepper, diced
115 grams, yellow sweet pepper, diced
55 grams, red onion, diced
227 grams, portabell mushrooms, sliced
90 grams, black beans, cooked
750 grams, Parmalat Chopped Tomatoes
275 grams, ham hock, smoked, diced
1 tablespoon Chipotle Hot Sauce (Tabasco)
1 teaspoon Oregano

Recipe Directions for Lentil Soup w/ Peppers

Place all ingredients in slow cooker and simmer (longer is probably better). When meat is falling off the bone remove ham hock and cool. Remove meat, dice and return to pot. Bones can also be returned until you are satisfied that soup is ready.
