This is a modification of a recipe from Better Homes & Gardens. Very good and easy-to-make soup.

Recipe Ingredients for Lentil Soup with mushrooms & vegetables

1 cup lentils
4 carrots
3 celery stalks
1 onion
2 T olive oil
4 cups vegetable broth (low sodium)
4 cups water
1 pound fresh mushrooms
1 tsp salt
1 tsp pepper
1 tsp oregano

Recipe Directions for Lentil Soup with mushrooms & vegetables

  1. Cut vegetables & saute in olive oil.

  2. add broth & lentils & seasonings;

  3. Boil (simmer) 25 minutes or until lentils are done.
