Recipe Ingredients for Lentil Soup with Moroccan Spices (Vita-Mix)

2 c chicken stock
50 g non-fat yogurt (1/4 cup)
1 c onion, sautéed
1/2 t extra virgin olive oil
3 garlic cloves, roasted
3/4 c raisins
3 c lentils, cooked
1 t dried thyme
1/2 t ground coriander
1/2 t turmeric
1/2 t cinnamon
1/4 t ground cardamom
1/4 t cayenne pepper
1/2 t paprika

Recipe Directions for Lentil Soup with Moroccan Spices (Vita-Mix)

  1. Reserve: 1 c lentils and dried thyme.

  2. Place all ingredients in Vita-Mix and run on High for 6-7 minutes.

  3. Reduce speed to Variable #4 or #5, place reserved ingredients in Vita-Mix and run for an additional 10 seconds.
