This is re-done from Wolfgang Puck's recipe since I didn't make his actual garam masala.

Recipe Ingredients for Lentil Soup, Indian style

2 tbsp vegetable oil
1 1/2 cups diced onions
2 tablespoons minced garlic
2 cups lentils
2 tablespoons finely minced ginger
1 tsp cumin
1/2 tsp chili powder
1/2 tsp turmeric
1/4 tsp black pepper
1/8 tsp ground clove
1/8 tsp ground cinnamon
1/8 tsp cardamom
1 1/2 tsp salt
1 tablespoon sugar
3/4 cup diced tomatoes
1/2 tablespoon rice vinegar
8 cups low sodium chicken stock

Recipe Directions for Lentil Soup, Indian style

  1. Heat butter or oil on medium heat. Add the onions and sweat them. Once translucent, add the garlic. Allow to sweat for 3-4 minutes.

  2. Add the lentils, ginger, spices, salt, and pepper. I also added a bay leaf, but the ingredient recognizer wasn't finding it. Allow to saute for 4 minutes.

  3. Add the tomatoes and rice vinegar to deglaze.

  4. Add the chicken stock and bring to a boil. Once boiling, turn down the heat and allow to simmer, stirring occasionally, until the lentils are tender.

  5. To create a more traditional texture, blend half of the soup to a puree and add to the still chunky mixture.
