Recipe Ingredients for Lentil Soup with Hot Italian Sausage

2 tsp olive oil, plus extra for drizzling
1 medium onion, chopped
2 carrots, peeled and chopped
2 celery stalks, chopped
2 garlic cloves, chopped
1 1/5 g (1/4 tsp) Kosher Salt
1/8 tsp freshly ground black pepper
14 1/2 ounces tomatoes, diced
1 pound Lentils
11 cups Chicken Broth
2 tsp dried oregano
56 g (1 cup) Ditalini pasta
1 cup shredded Parmesan
6 link,+4/lb Italian Sausages

Recipe Directions for Lentil Soup with Hot Italian Sausage

  1. Heat the oil in a heavy large pot over medium heat. Add the onion, carrots, and celery.

  2. Add the garlic, salt, and pepper and saute until all the vegetables are tender, about 5 to 8 minutes.

  3. Add the tomatoes with their juices. Simmer until the juices evaporate a little and the tomatoes break down, stirring occasionally, about 8 minutes.

  4. Add the lentils and mix to coat. Add the broth and stir. Add the oregano . Bring to a boil over high heat.

  5. Fry the sausages in a seprate sautee pan until cooked throuh.

  6. Remove the sausages from the pan and slice into 4 to 5 pices and add the sausage to the soup.

  7. Cover and simmer over low heat until the lentils are almost tender, about 30 minutes.

  8. Cook the pasta seperately for eight minutes or until tender in boiling water.

  9. Season with salt and pepper, to taste.

  10. Ladle the soup into bowls. .Add as needed to individual servings.Sprinkle with the Parmesan, drizzle with olive oil, and serve.
