Recipe Ingredients for LENTIL SOUP, HOMEMADE

2 tbsp OLIVE OIL, HEATED IN SOUP POT
2 cups ONIONS, SAUTE 5 - 8 MINUTES
3 cloves GARLIC
1/4 cup TOMATO PASTE, ADDED TO ONION
1/2 cup CARROT, DICED
1/2 cup CELERY, DICED
1/2 cup PARSLEY, SAUTE 2-3 MINUTES
1 1/2 cups LENTILS
2 quarts WATER, BRING TO A BOIL
1/2 tsp SALT, SIMMER 30 MINUTES
1 tbsp DIJON MUSTARD
1 tbsp RED WINE VINEGAR, TASTE

Recipe Directions for LENTIL SOUP, HOMEMADE

Saute onions in the oil about 5-8 minutes, then add garlic and tomato paste, then celery, carrots and parsley with 2 bay leaves. Let all of this saute another 2-3 minutes. Add lentils with 2 quarts water and salt. Bring to a boil then simmer 30 minutes. Add mustard and vinegar and taste for seasoning.
