Can use V-8 for juice, add spices, 1 T wine, etc. to vary it. ╝ t Creole seasoning or more is nice. The curry sounds strange, but it really makes it. 3/4 cup = 1 serving ~ 200 g

Recipe Ingredients for Lentil Soup Hearty from Ann

1 t olive oil
1 onion, small, chopped
1 stalk celery, chopped
1 carrot, sliced
4 cloves garlic, chopped
5 cups water
2 t broth
1 cup lentils
1 potato, small, diced
2 c tomatoes, canned
1/2 t curry powder
1/2 t basil
2 c tomato juice
1 red pepper, chopped
2 tomatoes, fresh, chopped

Recipe Directions for Lentil Soup Hearty from Ann

  1. SautÚ onion in olive oil until tender in soup pot. Add other veggies except red pepper and potato. SautÚ until tender. Remove from pot and set aside.

  2. Add washed lentils to pot with 5 C water and bouillon. Bring to a boil. Reduce heat and simmer until tender, 15 - 30 minutes depending on the age of your lentils. Use immersion blender until creamy or leave as is.

  3. Add cooked veggies, potato, canned tomatoes, juice and seasonings. Cook another 10 minutes.

  4. Stir in red pepper and 2 fresh tomatoes. Cook for 5 minutes.

  5. Salt/pepper to taste.
