Recipe Ingredients for Lentil Soup by Giada

2 tbsp Olive Oil
1 medium (2-1/2" dia) Onions
2 carrot (7-1/2") Carrots
2 stalk, large (11"-12" long) Celery
2 cloves, raw Garlic
400 grams Diced Tomatoes
1.25 cup Lentils, Mature Seeds
11 cup Soup, Chicken Broth
0.67 cu Elbow Macaroni
16 tbsp Parmesan, Shredded Cheese

Recipe Directions for Lentil Soup by Giada

  1. Heat the oil in a heavy large pot over medium heat. Add the onion, carrots and celery. Add the garlic, salt and pepper and saute until all the vegetables are tender, about 5 to 8 minutes. Add the tomatoes with their juices. Simmer until the juices evaporate a little and the tomatoes break down, stirring occasionally, about 8 minutes.

  2. Add the lentils and mix to coat.

  3. Add the broth and stir.

  4. Add 4-6 fresh thyme sprigs or an equivalent amount of dried thyme.

  5. Bring to a boil over high heat. Cover and simmer over low heat until the lentils are almost tender, about 30 minutes.

  6. Stir in the pasta. Simmer until pasta is tender but still firm to the bite, about 8 minutes.

  7. Season with salt and pepper, to taste.

  8. Ladle soup into bowls. Sprinkle with parmesan, drizzle with olive oil and serve.
