Recipe Ingredients for Lentil soup with chicken sausage

1 onion, chopped
4 cloves garlic, chopped
2 tbsp olive oil
2 carrots, chopped
2 stalks celery, chopped
1 tsp dried oregano
1 g bay leaf
1 tsp dried basil
430 g Stewed Tomatoes
250 g Lentils
1 cup yukon gold potato, chopped
8 cups water
1/2 cup spinach, rinsed and sliced
2 tbsp vinegar (optional, to taste)
1 salt and pepper to taste
4 link chicken sausages

Recipe Directions for Lentil soup with chicken sausage

  1. In a large soup pot, heat oil over medium heat

  2. add onions, carrots, celery

  3. cook and stir until onion is tender

  4. stir in garlic, bay leaf, oregano, basil. cook for 2 minutes

  5. stir in lentils, add water and tomatoes. bring to a boil. reduce heat, simmer for 1 hour.

  6. when ready to serve, stir in spinach and cook until wilted

  7. stir in vinegar, and season to taste with salt and pepper
