Recipe Ingredients for Lentil Salad with Red Onions & Garlic

3 tbs olive oil
150 g red onions (chopped)
200 g tomatoes (peeled, seeded & chopped)
2 tsp ground turmeric
2 tsp ground cumin
3/4 c lentils (rinsed)
3 3/4 c vegetable broth
4 cloves garlic
1 tbs fresh cilantro
1 tsp lemon juice

Recipe Directions for Lentil Salad with Red Onions & Garlic

  1. Heat 2 tbs oil & onions in large pan & cook until soft. Add tomatoes, turmeric and cumin, then stir in the lentils.

  2. Pour in the broth and bring to boil, then reduce heat & simmer until the lentils are tender & almost all liquid has been absorbed.

  3. In separate pan, fry garlic & 1 tbs oil until golden brown. Toss the garlic into the lentils with the fresh cilantro and season to taste. Serve warm or at room temperature with wedges of lemon.
