Recipe Ingredients for Lentil Salad

2.2 cup Unico Lentils
2 cup Spinach
4 oz Carrots
2 stalk, medium (7-1/2" - 8" long) Celery
0.75 oz Red Onion

Recipe Directions for Lentil Salad

  1. Rinse and drain lentils.

  2. Chop carrots celery and red onion and mix with lentils

  3. Serve on 1/2 cup baby spinach with balsamic dressing and goat cheese if desired.
