Lentil Salad with Red Onion, Feta and Mint

Recipe Ingredients for Lentil Salad

1/2 c. dried lentils
4 cloves garlic
2 T. olive oil
2 T. white wine vinegar
1/4 t. cumin
1/2 red onion
1/2 red bell pepper
3 T. chopped mint
3 oz. feta

Recipe Directions for Lentil Salad

  1. Cook lentils in about 1" of water with 2 cloves of garlic.

  2. Make dressing by combining oil, vinegar, 2 cloves of garlic (chopped), cumin and s&p to taste.

  3. When lentils are cooked, allow to cool and then mix in with chopped onion, chopped red pepper, mint and feta.

  4. Add dressing.

  5. Allow to sit for 6 hours or more to let flavors blend.
