a delicious salad of lentils, chopped vegetables, lemon, and olive oil

Recipe Ingredients for Lentil Salad

1 1/2 cups dry lentils
170 g baby carrots
1 medium red bell pepper
1 cucumber
1 medium yellow onion
4 oz feta cheese
2 tbsp olive oil
1/4 cup lemon juice
2 tbsp red wine vinegar

Recipe Directions for Lentil Salad

  1. Rinse and sort through lentils, removing any debris

  2. Put lentils in pot and cover with 3 cups of water

  3. Bring to boil and reduce to simmer, leaving lid cocked. Cook to desired doneness, about 15 to 20 minutes.

  4. Drain lentils and let cool.

  5. Add to chopped vegetables and stir in olive oil, lemon juice, vinegar, crumbled feta, and freshly ground black pepper.
