Lentil Salad Recipe

warm lentil salad with sun-dried tomato dressing.

Recipe Ingredients for Lentil salad

2 1/2 cup lentils
6 c water
1 t salt
3 cups lettuce
1/4 cup minced onion
1/2 cup feta cheese
1/4 cup sun dried tomatoes
6 T olive oil
3 T red wine vinegar
2 t Dijon mustard
2 t honey
1 t salt

Recipe Directions for Lentil salad

  1. In a large saucepan, add lentils and water. Bring to a boil, cover, and reduce heat to low. Simmer 20-25 minutes, until lentils are just tender. Remove from heat, and gently stir in salt, to taste.

  2. Divide lettuce leaves among four plates. Top with lentils, red onion and goat cheese. In a small bowl, whisk together all dressing ingredients. Drizzle on salad, to taste. Garnish with additional thyme leaves. Serve immediately.
