Very tasty Mediterranean flavours that get better the second day. Can be served chilled or at room temperature.

Recipe Ingredients for Lentil Salad

1 cup lentils
1 cup carrots
1 cup onion
3 garlic cloves
1/2 tsp thyme
1 cup celery
1 cup parsley
1/4 cup lemon juice
1 1/2 tblsp olive oil
1 tsp salt
1/4 tsp pepper

Recipe Directions for Lentil Salad

  1. Boil lentils, chopped carrots, minced onion, 2 minced garlic cloves, bay leaf and thyme for 15 minutes. Drain.

  2. Mix with chopped celery, last clove of garlic minced, lemon juice and olive oil.

  3. Season with salt & pepper.
