Recipe Ingredients for Lentil Salad

1/8 cup organic extra virgin olive oil
1 tbsp. red wine vinegar
1 tbsp. Dijon mustard
1/2 small red onion, minced
1/2 cup fresh parsley, chopped
1 tbsp. fresh thyme, chopped
15 oz Lentils
1 Sea Salt to taste
1 Pepper to taste

Recipe Directions for Lentil Salad

Mix together the olive oil, vinegar, mustard, red onion, parsley and thyme. Whisk Well. Stir in lentils, season with salt and pepper and refrigerate until serving time.
