Recipe Ingredients for Lentil Salad

1 cup lentils
1 onion
3 garlic cloves
1 tsp olive oil
1 cup chicken broth
4 scallions
1 carrot
2 celery stalks
1 tbsp red wine vinegar
1 tsp olive oil

Recipe Directions for Lentil Salad

  1. Saute oinion and garlic till soft and golden, add lentils, broth, simmer till lentils are soft, not mushy, and liquid is absorbed.

  2. Cool, add remaining ingredients, toss and adjust seasoning as desired.
