A basic lentil salad to try to get my potassium up!

Recipe Ingredients for Lentil Salad

1 cup Lentils (Petite French Green)
1 tbs Dijon Mustard
1 tbs red wine vinegar
2 carrots

Recipe Directions for Lentil Salad

  1. Simmer lentils in 4 cups water for 20-30 minutes. When done to your liking, drain thoroughly.

  2. While lentils cook, cook the carrots in a dry nonstick pan.

  3. Add carrots to cooked lentils and stir in red wine vinegar and Dijon mustard.
