Recipe Ingredients for Lentil Salad

17 oz cooked lentils
1 cup chopped fresh carrots
1/2 Onions
3/4 cup chopped celery
1/2 Lemons
1 tsp Mediterranean Olive Oil, Extra Virgin, Organic
1 salt and pepper to taste

Recipe Directions for Lentil Salad

  1. open your package of lentils or let your fresh cooked lentils cool and put them in a salad bowl

  2. add your chopped celery, onions and carrots and toss

  3. drizzle olive oil and sprinkle salt and pepper to taste, like you would dressing a salad.

  4. squeeze the juice of your lemon half into your lentil mixture and toss one more time.

  5. serve with a lemon slice or wedge and and yoghurt garlic dressing.

  6. Green/mixed salad on the side
