Recipe Ingredients for Lentil Salad with Maple/Balsamic Vinaigrette

1.5 cup Lentils (Petite French Green)
1 medium Carrots
1 medium raw Bell Pepper Red
1/4 cup chopped Scallions
0.5 cup Craisins, Sweetened Dried Cranberries
4.6 oz Walnuts Chopped
3 serving Balsamic Vinegar
1 tbsp Lemon Juice, Canned Or Bottled
0.063 cup 100% Pure Maple Syrup
4 tbsp Olive Oil, Extra Virgin
0.75 tsp Kosher Salt

Recipe Directions for Lentil Salad with Maple/Balsamic Vinaigrette

  1. Fill large saucepan with water, add lentils and a bay leaf; bring to boil. Reduce heat and simmer, partially covered, until lentils are cooked, about 18-20 minutes. The lentils should be tender but not mushy. Drain well and shake a few times to cool.

  2. When cool, combine lentils, grated carrot, chopped red bell pepper, minced parsley or scallion greens and roughly chopped raisins in a serving bowl.

  3. To make the dressing, in a separate bowl, whisk together the 3 T vinegar, 1 T lemon juice, 1 T maple syrup, 1/4 c olive oil, 3/4 t salt and pepper.

  4. This salad tastes best at room temperature on the day it's made. When ready to serve, add the dressing to the salad and mix well. Garnish with chopped walnuts.
