Lentil & Rice Stuffed Tomatoes

Recipe Ingredients for Lentil & Rice Stuffed Tomatoes

2 cloves Garlic
1 Hendrickson's Sweet and Tangy Red Bell Pepper & Tomato
4 large Tomatoes
1 cup Rice, White, Long-grain, Regular, Cooked
198 grams Lentils, Mature Seeds
28 grams Parmesan Romano and Asiago Shredded

Recipe Directions for Lentil & Rice Stuffed Tomatoes

  1. Simmer 1/2 cup lentils and 1/2 cup rice in 1 cup water for 10 minutes or until water is absorbed.

  2. Crush garlic cloves into Lentils and Rice mixture.

  3. Add Sweet and Tangy Red Bell Pepper & Tomato dressing.

  4. Sprinkle with onion powder and mix well.

  5. Stuff 4 hollowed out tomatoes with mixture and sprinkle with half the Shredded Parmesan/Mozzarella/Asiago Cheese.

  6. Bake in shallow pan at 350 for 15 minutes.

  7. Split open and sprinkle a bit more cheese on each half.
