lentil rice meal, slow cooker, adapted from THE BUSY MOM'S SLOW COOKER COOK BOOK

Recipe Ingredients for lentil rice meal

2 cups dry lentils
2 cups uncooked brown rice
1 cup chopped carrots
1 cups chopped onion
1 cup green bell pepper
1/2 cup diced celery
6 cups chicken broth
3 cups water
1 tsp garlic powder
1/2 tsp pepper
1 cup fresh sliced mushrooms

Recipe Directions for lentil rice meal

  1. spray inside of slow cooker with cooking spray.

  2. add all ingredients except mushrooms and mix well.

  3. cover and cook on low heat for 7-8 hours or high heat for 3 1/2 - 4 hours.

  4. stir in mushrooms and cook 1 hour.
