Lentil Rice Chickpeas Tomatoes

Recipe Ingredients for Lentil, Rice & Chickpea Casserole

3 tbsp olive oil
2 cups onion
2 cups rice
1 cup lentil
19 oz chick peas
28 oz tomato
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp cardamom

Recipe Directions for Lentil, Rice & Chickpea Casserole

  1. Heat oil

  2. Sautee onions till brown

  3. Remove onions

  4. Brown rice in remaining oil

  5. Add lentil chickpeas, oinions and spices

  6. Stir

  7. Add in tomatoes and liquid from can

  8. Bring to a boil

  9. Simmer 30 minutes

  10. Serve and garnish with parsley
