Quick simple hoss all ingredients in a slow cooker put on high leave for 3 hours and you have a meal. Serve with buttery mash or more veggies

Recipe Ingredients for Lentil and rice casserole in a slow cooker

8 oz red lentils
2 oz Rice
1 1/2 pints water
10 grams marigold bouillon vegetable powder
1 medium onion, finely chopped
3 garlic cloves, finely chopped
400 grams canned tomatoes, chopped with their juice
1 teaspoon ground cumin
1 teaspoon cayenne
1 teaspoon ground coriander, used as it doesnt have garam massala in its food logs
6 oz Frozen Mixed Pepper Strips
3 1/2 oz broccoli, cut into small florets
3 1/2 oz cauliflower, cut into small florets
2 oz frozen peas
2 teaspoon dried basil
1 salt and pepper, season to taste

Recipe Directions for Lentil and rice casserole in a slow cooker

  1. Place all ingredients into a slow cooker stir and put lid on and place on high and after 1 hour check liquid amouts, top up if needed place lid back on and leave for another 1 1/2 hours, after 3 hours you should a thick casserole with tender rice and lentils. Serve with hunk of bread buttery mash or serve with just loads of veggies.

  2. The reason I have ticked the quick box is all you do is cut veggies and place it all in the slow cooker therefore its quick as much as you dont have to stand over it and prepare and cook it and stand, you can make it up and go out and let the slow cooker do all the cooking.
