Recipe Ingredients for lentil quinoa salad

2 tablespoons safflower oil
1 cup quinoa
1/2 cups lentils
2 tsp salt
1 clove garlic

Recipe Directions for lentil quinoa salad

  1. hot or cold salad with lentils and quinoa

  2. saute garlic in oil

  3. add lentils and quinoa to skillet, cover in 1.5 cup water and bring to a boil, turn down heat and simmer for 15 min

  4. add .5 cup water and let absorb

  7. season to taste, lemon zest and vinegar works well
