A vegetable curry, made today when I had a billion things in the cupboard to use up. Very filling. Serve with wholegrain rice.

Recipe Ingredients for Lentil, Potato and Vegetable Curry.

1 medium (2-1/2" dia) Onions
60 grams Leeks
2 small (5-1/2" long) Carrots
1 cup Lentils, Mature Seeds
1/2 cup Red Lentils
1 small (1-3/4" to 2-1/2" dia.) Potatoes, Boiled
3 clove Garlic
1 tbsp Olive Oil
2 tbsp Coriander Leaf, Dried
2 tsp Turmeric, Ground
2 teaspoon Chilli Powder
2 tsp Cumin Seed
1 tsp Garam Masala
400 grams Tomatoes, Red, Ripe
2 serving Bouillon
1 stalk, small (5" long) Broccoli

Recipe Directions for Lentil, Potato and Vegetable Curry.

  1. Dice the onion, garlic, leek, potatos, carrots and brocolli.

  2. Fry the onions, garlic and leek then transfer into a large saucepan.

  3. Add the canned tomatoes, litre of stock, lentils, carrots, potatos, and all the spices.

  4. Leave to cook for half an hour.

  5. Prepare some brown rice and add in the brocolli five minutes before serving so it has time to cook but not go too soggy.
