Recipe Ingredients for Lentil Potage

2 tablespoons olive oil
1 1/2 cups diced onion
2 teaspoons curry powder
1 1/2 teaspoons salt
1 teaspoon paprika
1/2 teaspoon allspice
1/4 teaspoon black pepper
6 cups water
1 cup uncooked brown rice
15 ounces cooked chickpeas
14 cups fresh spinach
1 cup dried lentils
14 1/2 ounces diced tomatoes

Recipe Directions for Lentil Potage

  1. Add the olive oil to a heated Dutch oven and sautee the onion and all the seasonings for ten minutes. Then add the water and lentils and bring to a boil. Then reduce heat and simmer for 30 minutes. Add the spinach, cooked brown rice (cooked separately), and drained chickpeas (from a can). Remove from heat and let stand covered for 15 minutes.

  2. Can be served with Greek yogurt.
