Hearty lentil tomato sauce for pasta or good over baked spaghetti squash

Recipe Ingredients for Lentil and pepper pasta sauce

1 tbsp olive oil
1 large onion
2 cloves garlic
1/2 cup green bell pepper
1/2 cup red bell pepper
14 1/2 oz canned tomato
8 oz can tomato sauce
1 cup cooked green lentils
1 tsp dried basil
1 tsp italian seasoning

Recipe Directions for Lentil and pepper pasta sauce

  1. Cook 1/2 cup dried lentils in 1 1/2 cups boiling water.

  2. Saute onions, garlic, and peppers in olive oil.

  3. Add tomatoes and tomato sauce.

  4. Simmer 20 minutes or longer.

  5. Add cooked lentils and seasonings.

  6. Simmer 10 minutes.

  7. Serve over cooked pasta or spaghetti squash.
