Hearty, yummy soup for the winter!

Recipe Ingredients for Lentil and Pasta Soup

1 pound penne pasta
6 oz greek yogurt, fat free
2 1/2 cups chicken broth
1 onion
3 carrots
1 celery stalk
1 1/2 cups red lentils
4 cloves garlic
3 cups water
1 tablespoon black pepper
1 tablespoon paprika
1 tablespoon olive oil

Recipe Directions for Lentil and Pasta Soup

  1. Saute garlic, onion, celery, and carrots in olive oil for 5 minutes or until soft.

  2. Add broth, water, lentils, black pepper, and paprika. Bring to a boil, then reduce heat and simmer for 15 minutes or until lentils are soft.

  3. Let cool for 10 minutes.

  4. Cook pasta according to package instructions. Drain, set aside.

  5. Blend soup in blender or food processor, then return to soup pot. Add pasta.

  6. Simmer for 5 minutes.

  7. Turn off heat, cool slightly, and add yogurt slowly.

  8. Serve with freshly chopped parsley and black pepper.
