Recipe Ingredients for Lentil & Orzo Soup

4 celery stalks
4 small carrots
2 cups cooked green lentils
1/2 cup orzo
6 oz Tomato Paste
6 cups vegetable broth
1 red onion
3 cloves garlic
1 tbsp olive oil

Recipe Directions for Lentil & Orzo Soup

  1. Saute onion and garlic in olive oil

  2. Add celery and carrots

  3. Add vegetable broth or bullion cube

  4. Season to taste (oregano, tarragon, basil, bay leaves, etc)

  5. Add lentils & orzo (I used cooked lentils & uncooked orzo - but whatever you have layin' around)

  6. Bring to a boil and add the tomato paste

  7. Cook a wee bit more - basically until you're ready to eat!
