Tasty vegetarian version of a traditional greek dish

Recipe Ingredients for Lentil Moussaka

1 1/2 cup lentils
2 mushrooms, sliced
2 tomatoes, chopped
1 red onion, chopped
1 eggplant, sliced
1 potato, sliced
1 sweet potato
1 tbsp olive oil
1 tsp cumin
1/2 tsp cinnamon
4 cup non fat milk
1/4 cup whole wheat flour
1/4 cup becel
1 cup stock
8 cup water

Recipe Directions for Lentil Moussaka

  1. Fry the onion and spices in a little olive oil for a couple of minutes, then add the lentils (I use whole brown & red mix) and keep frying for another 3-4 minutes, add your mushroom and chopped tomato, cook for a further 5 minutes or so and then add your stock. Simmer the lentil mix for 40 mins or until lentils are cooked but not over-soft.

  2. While the mix is cooking, boil the potato slices in a little unsalted water until cooked, brush the eggplant slices with a little olive oil and grill or pan fry until soft and browned. Make up the white sauce (I always use a packet and skimmed milk).

  3. Put some of the lentil mix in the bottom of a lasagna/casserole dish, place a layer of potato on top, then the rest of the lentil mix, then the rest of the potatoe, then the eggplant slices. Cover with white sauce, sprinkle a handful of low fat cheese on top and grill until cheese melts and browns.

  4. Serve with steamed broccoli or salad leaves.
