Recipe Ingredients for Lentil moussaka

75 ml (3fl.oz) Oil
1 large Onion
1 clove Garlic, crushed
150 g (5oz) Celery, chopped
397 g (14oz)Tomatoes, Canned
225 g (8oz) Lentils
15 ml (1tbsp) Soy Sauce
15 ml (1tbsp) Tomato Puree
1 Salt and Pepper
900 ml (1 1/2 pts) Water
450 g (1lb) Aubergines, sliced
150 ml (5fl.oz) yogurt, fat free
50 g (2oz) Cheddar Cheese ,low fat, grated

Recipe Directions for Lentil moussaka

  1. Heat 1 tbsp of the oil in a large saucepan with the onions and cook gently until soft and lightly browned. Add the garlic, celery, tomatoes (with juice), soy sauce, tomato puree, pepper and water, Bring to the boil and boil rapidly for 10 minutes. Reduce heat, cover and simmer for about 30 minutes until lentils are tender and most of the liquid has been absorbed.

  2. Meanwhile sprinkle the aubergine slices with the salt and leave to stand for about 1 hour. Rinse thoroughly and dry.

  3. Heat the remaining oil in batches and fry the aubergine slices until lightly browned. Drain on kitchen paper.

  4. Pour a layer of the lentil mixture into the base of a shallow ovenproof dish. Cover with a layer of aubergine. Continue to layer the rest of the ingredients, ending with aubergines.

  5. Pour the yoghurt over the top and sprinkle the grated cheese over. bake in the pre-heated oven at 190C (375F) Gas Mark 5 for 25-30 minutes until lightly browned.

  6. Serve hot with a salad.
